Poulet avec Citrouille
Late autumn is when the pumpkins are ready to be eaten which is why this dish is so popular on the farm in the early winter. The kitchen tries to use as many pumpkins as possible while they are fresh.
Ingredients:
3 tbsp. olive oil
½ lb chicken breast diced
4 tbsp. flour
1 onion
2 carrots
2 jalapeno peppers minced
2 tbsp. sugar
1 tsp pepper
1 tsp ginger
¾ kosher salt
½ tsp cinnamon
1 pinch saffron
1 lb pumpkin
3 c broth
4 tbsp lemon juice
¼ c raisins
Directions:
Heat oil. Toss chicken pieces in flour and sauté over med high heat until the chicken starts to colour. Add the onion, carrots & jalapeno. Stir for a minute or 2. Stir in the seasonings and pumpkin, add broth & lemon juice and simmer for 30 minutes or until sauce thickens. Stir in the raisins and serve over couscous.
