Cote de Porc avec pommes
This is a very popular dish at Townsend because the farm has only a small herd of the free range pigs that the kitchen uses to make the delicious pork dishes that are so popular. This recipe utilizes a few of the abundant ingredients located in the Province; Apples, Pork & Maple Syrup
Ingredients
1 Tbsp butter
4 thick cut free range pork chops
salt & pepper
1 ½ Tbsp flour
1 ½ Tbsp pure maple syrup
1c apple cider or juice
2 tart apples, sliced in half, cored but not peeled
Directions
Pre Heat oven 325 deg
In a heavy bottomed skillet heat butter till bubbly, add pork chops, sprinkle with salt & pepper, brown on both sides. In a plate dredge the browned pork chops in the flour to coat. Place chops back into pan, with a spoon spoon maple syrup on each chop and using bottom of spoon rub into meat. Place an apple half on each chop and pour juice/cider into pan.
Place lid on pan & place in pre heated oven. Bake for approx. 30 min till cooked through & apples are tender and form a thick sauce.
