Porc à l’aigre-douce

Serve with either rice or chow-mien noodles

1 ½ lbs lean pasture raised pork shoulder, cubed or strips
½ c water
2 ½ c pineapple chunks, reserved juice
¼ c brown sugar
2 Tbsp cornstarch
¼ c vinegar
3 Tbsp soy sauce
½ tsp salt
1 tsp ground fresh ginger
1 small green & red pepper, cut into strips
1 medium onion, thinly sliced

In skillet over medium high heat add fat and brown cubed pork till golden on all sides. Add water and reduce heat to low, cover & simmer for approx. 45 min – 1 hr or till tender.

In medium bowl combine sugar, starch, add syrup, vinegar, soy sauce, & salt. Add to the pork; cook and stir till sauce thickens.

Add pineapple, pepper and onion slices. Cook 2-3 min longer. Serve.
